The easiest and most delicious Low FODMAP chocolate chip cookies

As some of you might know, I’ve recently started my new teaching job up in Scotland. This is my first year being completely in control of the class so there is a lot of stress and late nights involved while I get my head around what I’m meant to be doing. You’ll be happy to know that I am getting there but I’ve been finding it really difficult to completely switch off at night because I’ve just got so much going on in my head. So, I have turned my attention back to baking to ease the stress and help me think and focus on something else for at least an hour.

This plate won’t last long!

So what did I decide to bake this week? One of the kids in my class had some Maryland chocolate chip cookies for their snack and they reminded me of childhood parties with Maryland chocolate chunk cookie packets on the treat table. I was always quite a fussy eater (not because of tummy troubles back then) when I was small so when everyone else was enjoying the quiche, I was staring at the treat table thinking of how much nicer those cookies would taste once I’d managed to swallow the quiche.

Love adding in the chocolate chips! And I love my new Salter scales – the lemons are so cute!

Anyway, fast forward a good 10 years, while I may not be quite so fussy in what I actually enjoy, I’m still a sucker for a good old chocolate chip cookie. And I don’t know about you guys, but I always find that gluten free biscuits are really quite overpriced and often really tiny. Yes, they’re easy and convenient but I hate having to pay way more than everyone else just because I have to avoid gluten.

So, my solution…make my own! That way I can make as many and make them as big as I want! And when it comes to chocolate chip cookies, bigger is always better in my eyes. 

I couldn’t help myself when they came out of the oven!

And the best thing about this recipe is how easy and quick it is to make. You can whip up a batch in about 30 minutes without much of a problem. To me, going from no cookies, to delicious low fodmap and gluten free chocolate chunk cookies in half an hour is amazing!

Fancy giving them a go and having a delicious treat ready in no time with minimal effort? Follow the simple steps below for your very own low fodmap and gluten free chocolate chunk cookies. 

Low FODMAP and Gluten free chocolate chunk cookies  (Makes between 18-22 cookies)

You’ll need:

  • 100g softened butter (dairy free if necessary)
  • 150g caster sugar
  • 1 egg
  • 1 ½ tbsp vanilla essence
  • 185g gluten free flour
  • 1 tsp baking powder (gluten free if necessary)
  • Pinch of salt
  • 150g lactose free chocolate chips  (or lactose free chocolate chopped up into small pieces)

Method:

  1. Pre-heat a fan oven to 175*c and line a baking tray with greaseproof paper. 
  2. In a large mixing bowl, cream together the butter and sugar either by hand or with an electric mix. 
  3. Beat in your egg, vanilla essence and salt.  Mix well until fully combined. 
  4. Stir in the gluten free flour, baking powder and the chocolate chunks. 
  5. Roll the cookies into ping-pong sized balls and place on the baking tray. 
  6. Place in the pre heated oven and bake for 11 minutes until golden brown. The cookies will still feel a little soft to the touch immediately after baking. 
  7. Transfer to a cooling rack and allow to fully cool.
  8. Enjoy.
