Low FODMAP dessert

Chocolate Orange Brownies (low FODMAP, Gluten Free and lactose free)

*NEW RECIPE*

Does your chocolate brownie recipe need an update? Are you getting a bit bored of your normal low FODMAP and gluten free chocolate brownies?

I was too, so I knew that I needed a change because brownies should be lots of things but boring should never be one of them!

Now I don’t know about you guys but to me the best flavour combination to go with chocolate (that isn’t just more chocolate!) is orange. A chocolate orange flavour always takes me back to the good old days when my Mam bought me a Terry’s Chocolate Orange Easter egg. By far it was my favourite chocolate as a child and it still is even now! It’s even got to the point where my grandparents don’t bother buying me an egg anymore but just lots of the dark chocolate oranges because theres more delicious chocolate.

Anyway, Im getting slightly side tracked with my talk of my favourite chocolate, so back to the delicious brownie recipe that I have for you! These brownies have been a family favourite since the first time I made them a few weeks ago and the rest of my family didn’t even realise I’d made low FODMAP, gluten free ones until they saw the flour on the bench that I had forgotten to put away (rookie mistake when you’re trying to be secretive, I know!). They’re really rich and chocolatey but the orange gives a really zingy different flavour to cut through the richness meaning that I could quite happily eat the whole batch in one go without much of a problem.

So if your low FODMAP, gluten and lactose free brownie recipe needs an update, give my Chocolate Orange brownie recipe a go and I guarantee that you won’t be disappointed!

Gluten free and low fodmap dark chocolate orange brownies (Makes about 9 – 12 brownies.)

You’ll need:

  • 1 bar (100g) of dark lactose free chocolate ( or my favourite dark chocolate Terry’s chocolate orange if you can tolerate lactose)
  • 125 g butter
  • 85 g sugar
  • 2 eggs
  • 15 g cocoa powder
  • 75 g gluten free plain flour
  • ¼ tsp gluten free baking powder
  • ¼ tsp xanthum gum (optional but helps to bind together)
  • 1 large orange (juice and rind)
  • To decorate: a few squares of dark chocolate and a few tsp of orange juice

Method:

  1. Preheat the oven to 190*c. Grease and line a square baking tray.
  2. Melt together dark chocolate and butter in a saucepan over a low heat. Stir the mixture occasionally to ensure ingredients are combined. Allow to cool for 2 minutes.
  3. While melting the chocolate and butter, combine all other ingredients in a large bowl (except ingredients for decoration).
  4. Add the melted chocolate and butter mixture to the other ingredients and mix thoroughly.
  5. Pour the brownie mixture into your pre-lined dish and bake for about 20 minutes.
  6. Allow brownies to cool for at least an hour before decorating.
  7. To decorate: melt a few squares of dark chocolate in the microwave in 20 second intervals stirring between until just melted. Add in a 3 tsp orange juice. Mix together until fully combined. Microwave for a final 20 seconds to make it easy to drizzle on the top. Drizzle over the brownies and allow to harden in the fridge for at least 20 minutes.
  8. Enjoy and try not to eat them all at once!
